| The Hotel du Vin in Edinburgh is nestled in the city’s Old Town, just a short walk from the historic Royal Mile, St. Giles Cathedral, the Palace of Holyrood, Edinburgh Castle and the famous Bedlam theatre. The oldest part of the building was constructed in 1698 and once served as the city asylum. Many of the luxuriously decorated bedrooms feature the original stone, with high ceilings and exposed brick and rafters. There is a mezzanine bar, and the fun and busy bistro serves classic European cuisine. There is a beautiful courtyard for outdoor dining, a cigar shack (necessarily away from the hotel and restaurant), a whisky snug with over 200 whiskies and a one-of-a-kind wine tasting room with an extensive wine list. This recently opened hotel is part of the hugely successful Hotel du Vin/Malmaison group of hotels. Marianne Clavé, the general manager, opened and managed The Haymarket Hotel in London, (a Firmdale Hotel), until she decided to return to her native Scotland. |
